The fifth group of the caste system is the untouchables.  The untouchables' work include working with dead animals or cleaning sewage.  The untouchables are known to be unclean from birth, thus they are assigned work that would "pollute" the higher classes.  This is different than the Sudra whose work benefits the higher classes.
